The Lottie: Shrimp & Sausage Spicy Skewers

INGREDIENTS

DIRECTIONS

  • Make spicy mayo sauce in a small bowl by combining mayo, sriracha and sweet chili sauce. Set aside.
  • Cut The Lottie sausage into ⅓ - ½ inch slices. Place shrimp around the sausage disk and skewer them to hold together. Do 3 to 4 pieces per skewer. 
  • Once all the skewers are assembled, drizzle with oil, salt and pepper and minced garlic. 
  • Sear one side on the grill or flat top for ~ 3-4 minutes. Then brush the cooked side with spicy mayo and cook the other side.
  • Once cooked through (shrimp should be pink and firm), brush again and garnish with sesame seeds and minced scallions.
  • Option to bake in the oven at 375 degrees for about 5 minutes per side if not grilling!
