INGREDIENTS
- 1 pack The Lottie - Smoked Pork Sausage
- 1- 1.5 lbs shrimp, peeled and devined
- 14-16 wooden skewers
- ½ cup mayo
- 1 tbsp sriracha
- 1 tsp sweet chili sauce
DIRECTIONS
- Make spicy mayo sauce in a small bowl by combining mayo, sriracha and sweet chili sauce. Set aside.
- Cut The Lottie sausage into ⅓ - ½ inch slices. Place shrimp around the sausage disk and skewer them to hold together. Do 3 to 4 pieces per skewer.
- Once all the skewers are assembled, drizzle with oil, salt and pepper and minced garlic.
- Sear one side on the grill or flat top for ~ 3-4 minutes. Then brush the cooked side with spicy mayo and cook the other side.
- Once cooked through (shrimp should be pink and firm), brush again and garnish with sesame seeds and minced scallions.
- Option to bake in the oven at 375 degrees for about 5 minutes per side if not grilling!
