Blood Orange & Beet Lottie Sausage Salad

Whoever said orange is the new pink was seriously disturbed...The Lottie is looking pretty in pink in this fresh salad with radicchio, blood orange, roasted beets, feta, and nuts tossed in a bright lemon mustard vinaigrette. Easy and flavorful!

INGREDIENTS

Salad:

  • 1 package of The Lottie Sausage links
  • 1 small head of radicchio
  • 1 watermelon radish
  • 1 blood orange
  • 1/4 cup pickled onion
  • 1/2 cup crumbled feta
  • 1/4 cup walnuts or hazelnuts
  • 3-4 small roasted beets

Dressing:

  • 1/4 cup olive oil
  • 1/2 lemon juiced
  • 1 tbsp apple cider vinegar
  • 1 tbsp mustard
  • 1 tsp sugar
  • salt and pepper to taste

DIRECTIONS

  • Prep the ingredients: Wash and dry the radicchio, then chop into bite-sized pieces. Thinly slice the watermelon radish and peel and segment the blood orange. Slice the roasted beets into wedges.
  • Cook the sausage: Heat a skillet over medium heat. Add The Lottie smoked sausage links and cook until warmed through and lightly browned on all sides. Slice into bite-sized pieces, or leave as a link!
  • Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, mustard, sugar, salt, and pepper until smooth. 
  • Assemble the salad: In a large bowl, combine the radicchio, watermelon radish, blood orange, roasted beets, pickled onion, and nuts.
  • Add sausage + finish: Add the warm sausage to the salad, drizzle with dressing and some crumbled feta cheese, and toss gently to combine. OR plate the sausage link and then add the salad on the side!
