LOTTIE'S SWEET & SPICY POWER BOWL

Sister #2 (the one is who very much NOT the chef) whipped this one up so give us grace with the recipe instructions below (LOL).

This is a great weekday lunch or din that will keep you coming back for more and...only takes 20 min - enjoy!!

INGREDIENTS

  •  1 Pack of the Lottie
  •  1 Sweet Potato
  •  1 Red Pepper
  • ½ Yellow Onion 
  • Avocado & Choice of Leafy Green!
  • 1-2 TSPs Olive Oil
  • 1 TBSP Honey
  • 1 TBSP Siracha
  • 3 TBSP Mayo
  • 1 TBSP Sour Cream 
  • Pinch of Salt & Pepper
  • Optional: 1 Cup Jasmine Rice (we like instant microwavable packs)!

DIRECTIONS

  • Preheat oven to 425 degrees & line a baking sheet with parchment paper.
  • Slice & dice your veggies - sweet potato, red pepper & onion - into strips & wedges.
  • Toss sweet potato in olive oil, salt and pepper, and if you’re feeling it, a little honey-and-cinnamon- moment! 
  • Add sweet potatoes to baking sheet and roast for ~20 minutes (can flip halfway through). 
  • Heat olive oil in a pan and add pepper and onion + salt & pep. Saute for 7-8 minutes on med-high heat until soft. Set aside.
  • In the same pan, add 2-4 links of the Lottie links on medium heat. We like to add a little water and cover for 5 minutes. Then, remove lid and flip sausages. Saute for another 3 minutes. 
  • For the sauce, combine mayo, sour cream, honey and sriracha until a bowl and mix. Add a little water to thin as needed. Set aside.
  • Then, if using microwavable or instant rice, DO THAT.
  • Then, throw it all together to make a sweet-and-savory power bowl and ENJOY!
