Lottie's Jumbalya

Big pot, bold flavors, and just the right amount of heat! This Cajun-style sausage and shrimp dish brings together our best-selling sausage - The Lottie - with tender rice, and plenty of spices for a one-pot meal that’s easy enough for a weeknight but impressive enough to share. Enjoy!

INGREDIENTS

  • 3 tbsp cooking oil
  • 1 package of The Lottie 
  • 3 tbsp + 1 tsp of Cajun seasoning (divided)
  • 1 large white or yellow onion
  • 9 mini or 3 regular bell peppers
  • 4 stalks of celery
  • 4 large cloves garlic, minced
  • 1 tsp black pepper + 1 tsp salt
  • 1/4 tsp cayenne
  • 2 tsp Worcestershire sauce
  • 2 cups uncooked rice
  • 4 cups chicken broth
  • 1 lb raw shrimp, thawed 
  • green onion or parsley for topping (optional)

DIRECTIONS

  1. Heat a little oil in a large pot over medium heat. Add The Lottie  and 2 tablespoons of Cajun seasoning, cooking until the sausage is nicely browned. Remove the sausage from the pot and set it aside for now.
  2. In the same pot, add the onion, bell pepper, celery, and 1 tablespoon Cajun seasoning. Cook until the veggies are softened and starting to turn translucent.
  3. Stir in the garlic and cook for another minute, just until fragrant.
  4. Add the remaining seasoning — 1 teaspoon Cajun seasoning, salt, black pepper, and Worcestershire sauce — and give everything a good stir.
  5. Return the sausage to the pot, then add the rice and broth. Bring everything to a boil.
  6. Reduce the heat to low, cover, and cook for 15–20 minutes, stirring occasionally, until the rice is tender and most of the liquid has been absorbed.
  7. Remove the lid and place the shrimp right on top of the mixture. Stir gently, cover again, and cook for another 5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  8. If you're feeling fancy, top with sliced green onions or fresh parsley, serve it up, and enjoy!
