INGREDIENTS
- 1 pack of The Lottie
- 1 pack hot dog buns
- 3 Persian cucumbers, finely diced
- 2 cups ripe tomatoes, finely diced
- ½ small red onion, finely diced
- 3 tbsp fresh lemon juice
- 2 tbsp extra-virgin olive oil
- 1 tbsp fresh parsley or mint, finely chopped
- 1 tbsp garlic aioli or mayo (we love Graza Garlic Aioli!)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
DIRECTIONS
- Finely dice the cucumbers, tomatoes, and red onion into small, even pieces. Transfer to a mixing bowl.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper until well combined.
- Finely mince the fresh herbs, place in the mixing bowl.
- Pour the dressing over the chopped vegetables and toss to coat evenly.
- Let the salad sit for 10-15 minutes to allow the flavors to come together.
- In the meantime, cook The Lottie your favorite way. We like to add to a medium-heat pan with 1/4 cup water and cover for 5 minutes and then, remove lid and cook for another 3-5 minutes to get that perfect snap!
- Spread the garlic aioli on the bun. Serve the cucumber tomato salad chilled or at room temperature, on top of your Lottie of course!
