Everyday Sausage Pancake Skillet with Apples & Cheddar

INGREDIENTS

Pancake Batter:

  • 2 cups all purpose flour
  • 1.5 tbsp cane sugar
  • 2.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt 
  •  5 tbsp butter (divided)
  • 1.5 cups buttermilk
  • 3 eggs

Mix Ins:

  • 1 pack of Lottie’s Everyday Sausage
  • 2 large apples or 3 small apples, cored and diced 
  • 1 tsp cinnamon 
  • 8 oz of sharp cheddar cheese, shredded

DIRECTIONS

  • Preheat cast iron skillet or non-stick oven safe skillet in oven at 375 degrees (we used a 12" skillet).
  • In a medium pan, soften diced apples with cinnamon over medium low heat.
  • Remove apples, and use the same pan to brown Lottie’s Everyday Sausage until cooked through.
  • Next make the batter: combine dry ingredients in one bowl (all purpose flour, cane sugar, baking powder, baking soda, salt). In a separate bowl combine wet ingredients (buttermilk, eggs, 3 tbsp melted butter).
  • Combine wet and dry ingredients into one bowl, mix until just combined. Add in 1.5 cups of softened cinnamon apples, 1.5 cups shredded cheese, 1.5 cups cooked sausage and mix. 
  • Remove the preheated skillet from the oven, add in 2 tbsp butter to coat the pan. Then pour in the batter, and sprinkle with remaining toppings. 
  • Cook for 35-40 min or until pancake batter is baked through. Serve with lots of maple syrup on top!
