Everyday Sausage & Parmesan Lemon Pepper Gnocchi

Crispy, pan-fried gnocchi and Lottie's Everyday Sausage are the ultimate duo. Tossed with roasted broccoli, portobellos, and a zesty Parmesan lemon pepper cream sauce, this 30-minute meal is full of flavor and fun!

INGREDIENTS

  • 1 lb of Lottie’s Everyday Sausage 
  • 1 head broccoli, cut into florets
  • 1 yellow onion, diced 
  • 2 large portobello mushrooms, sliced thin
  • 28 oz gnocchi
  • 1.5 tsp garlic powder (divided)
  • 1 tsp ground black pepper (divided)
  • 4 oz cream cheese
  • 1/2 cup grated Parmesan 
  • 1 lemon (2 tsp lemon juice, zest of half of lemon)
  • Preferred cooking oil for roasting broccoli and pan frying

DIRECTIONS

  1. Preheat oven to 450 degrees. Cut 1 head of broccoli into florets. Roast on sheet pan with olive oil salt and pepper for 25-30 min.
  2. Heat a skillet over medium heat, add preferred oil to pan, brown Lottie’s Everyday Sausage. Add onion and mushrooms. Stir in 1 tsp garlic powder, 1/2 tsp black pepper and pinch of red pepper flakes.
  3. Sauté until sausage is cooked through and onions and mushrooms are softened and caramelized. Remove mixture from pan and set aside.
  4. Pan fry gnocchi in same pan over medium heat - add preferred oil to help gnocchi crisp up and brown.
  5. Meanwhile, make Parmesan lemon pepper creamy sauce by mixing together 4oz softened cream cheese, 1/2 cup grated Parmesan cheese, lemon zest of half lemon, 2 tsp lemon juice, 1/2 tsp black pepper, 1/2 tsp garlic powder and 1 tbsp water.  
  6. Once gnocchi starts to brown, Reduce heat to medium-low and add in parm pepper creamy sauce, stir to coat, then mix back in sausage, mushroom and onion mixture to reheat.
  7. Stir in roasted broccoli. Top with more parm and dig in!
