Everyday Sausage, Goat Cheese & Egg Breakfast Sandwich

INGREDIENTS

  • 1 pack of Lottie’s Everyday Breakfast sausage
  • 2 English muffins, split
  • 2–3 oz goat cheese, softened
  • 2 tbsp jam (hot pepper jam for some heat or fig jam for a milder-sweet finish)
  • 2 large eggs
  • A handful of fresh arugula
  • Butter or oil, for the pan

DIRECTIONS

  1. Form the patties: For two sandwiches, divide the Everyday Ground Pork sausage into 2 equal portions and press into patties about 1/4-inch thick (~3 ounces)
  2. Cook the sausage: Heat a skillet (cast iron works great) over medium heat. Cook the patties 4–5 minutes per side, until browned and cooked through.
  3. Toast the muffins: While the sausage cooks, split and toast the English muffins until golden.
  4. Fry the eggs: In the same skillet, fry the eggs to your liking (we are team runny yoke).
  5. Build the sandwich: Spread room temperature goat cheese generously on the bottom half of each muffin. Top with a sausage patty. Add the fried egg, then a handful of arugula. Spread hot pepper jam (or your fave equivalent) on the top muffin half and close the sandwich.
