Everyday Ground Pork Meatballs with Palisades Peaches

Lottie's Meats Everyday ground pork sausage meatballs with grilled palisades peaches and rice. Meatballs made with sage, thyme, chile flake and a hint of natural sweetness - perfect for a light, bright summer dinner!

INGREDIENTS

  • 1 lb of Lottie’s Everyday Breakfast sausage 
  • ½ in ginger grated, or 1 tsp ground ginger
  • 2 garlic cloves grated
  • ¼ cup fresh basil chopped + leaves for garnish
  • 1 tsp ground cumin
  • ⅓ cup panko or breadcrumbs
  • 2-3 ripe Palisade Peaches, medium diced
  • ½ red onion, thinly sliced
  • ½ cup dry white wine
  • 1 lime
  • Steamed rice for serving

DIRECTIONS

  • In a bowl mix Lottie’s Everyday ground pork sausage, ginger, garlic, basil, cumin, a pinch of salt and bread crumbs until combined. 
  • Portion meatballs into 1 inch balls. 
  • Heat skillet over medium-heat, add 1 tbsp olive oil and sear meatballs to get a nice caramelization on all sides. Deglaze with 2 tbsp white wine.
  • Add peaches and rest of wine and cover until wine has slightly reduced and peaches barely start breaking down (about 4-5 minutes). 
  • Add sliced red onion and a ½ squeeze of lime (Tip: add a splash of water if looking a little dry). Let cook 2-3 minutes to break down the onions slightly. 
  • Season with salt and a hint of chile pepper (Tip: We like aleppo for a bright fruity spice).
  • Serve with steamed rice and garnish with fresh torn basil and a lime wedge. Enjoy!
