  • Preheat the oven to 350 degrees.
  • In a skillet over medium heat, crumble the Everyday Sausage and cook until browned, about 5 minutes.
  • Stir in the diced fruit; sauté just until it begins to soften, 3–5 minutes. Remove from heat.
  • Tear the bread into bite-size chunks and place in a large mixing bowl.
  • In a separate bowl, whisk together the 6 eggs, cream, and shredded cheese; season with a pinch of salt and pepper.
  • Add the sausage-fruit mixture to the bread, then pour the egg mixture over the top.
  • Toss gently until all the bread is evenly coated.
  • Lightly oil a 9 × 13-inch baking dish.
  • Spread the casserole mixture evenly in the dish.
  • Sprinkle with the diced Gouda, then carefully crack 2 eggs on top (keep yolks whole).
  • Cover with foil and bake for 30 minutes.
  • Remove foil and check the two eggs: if the whites are set, the casserole is done; if not, bake 5–10 minutes more, uncovered.
