INGREDIENTS
- 1 lb of Lottie’s Everyday Breakfast sausage
- 1 box penne pasta
- ½ red onion, diced
- 1 garlic clove, microplaned
- 3-4 heads broccoli, cut into bite-sized pieces
- 1 lemon, zest and juice
- ¾ cup white wine
- 4 oz gouda cheese, shredded
- ½ cup milk
DIRECTIONS
- Cook pasta according to package directions until al dente. Be sure to reserve 1-2 cups of pasta water.
- In a large saucepan, brown sausage over medium heat.
- Add garlic and onion, and cook for 3-4 minutes until fragrant. Deglaze the pan with white wine and let it reduce.
- Add broccoli and a heavy pinch of salt. Pour in milk and reduce heat to low-medium. Once the milk has reduced by half, add shredded cheese and stir.
- Toss the cooked pasta into the sausage and broccoli mix, along with the zest and juice of 1 lemon. Add pasta water as needed to create a nice, glossy sauce. Season with salt and pepper to taste. You can top with more cheese or serve directly from the pan.
