Everyday Breakfast Pizza

A new morning routine featuring our Everyday Sausage. Who says you can't have pizza for breakfast?

INGREDIENTS

  • 1/2 lb of Lottie’s Everyday Breakfast sausage 
  • 1 pizza dough 
  • 2-3 eggs
  • 1 cup shredded Tillamook Cheddar cheese
  • 2 green onions, chopped
  • 1 cup diced, blanched roasted potatoes
  • Olive oil, salt, and pepper

DIRECTIONS

Instructions:

  1. Preheat Oven: Heat oven to 475°F (245°C).
  2. Prepare Potatoes: Bring a pot of salted water to a boil. Add diced potatoes and cook for 8-10 minutes until tender. Drain and set aside.
  3. Prepare Dough: Roll out pizza dough on a floured surface. Transfer to a baking sheet and brush dough with olive oil.
  4. Scramble Eggs: Whisk eggs with a splash of milk, salt and pepper. Scramble in a skillet on low heat until slightly soft, then set aside. Or can crack 1-2 eggs on top of pizza and bake. 
  5. Assemble Pizza: Spread a little cheese on the dough. Place little balls of raw sausage around pizza, then scatter potatoes and top with a little more cheese. 
  6. Bake: Bake pizza for 10 mins. Remove from the oven and add scrambled eggs or cracked eggs and add a sprinkle more of cheese. Bake for another 10 mins until the crust is golden and cheese is melted.

Serve: Garnish with green onions, slice and enjoy!
