

INGREDIENTS
- 1 pack of Lottie’s Calabrian Sausage
- 4 cans cannellini beans, rinsed
- 1 small white onion,small diced
- 2 cloves garlic, microplaned
- 4 cups chicken stock
- ¼ cup tomato paste
- ½ cup tomato puree
- 1 cup heavy cream
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp fresh parsley, chopped
- ½ cup grated parmesan
DIRECTIONS
- Brown that Calabrian sausage in a medium pot over medium heat.
- Toss in the diced onion and microplaned garlic, and cook until they're nice and soft (about 5 minutes)
- Stir in the tomato paste and puree, let it cook for a few minutes to build up flavor. Sprinkle with salt and pepper to taste.
- Pour in the chicken stock, bring it to a boil, and then add the cannellini beans. Let it simmer for about 15 minutes.
- Add the heavy cream, taste it, and adjust the salt if needed. If you want more kick, throw in some chile flakes!
- Before you serve, stir in the fresh parsley and grated Parmesan.
- And, don't forget to enjoy with some crusty sourdough bread!
