CALABRIAN | Creamy White Bean Soup

INGREDIENTS

  • 1 pack of Lottie’s Calabrian Sausage
  • 4 cans cannellini beans, rinsed 
  • 1 small white onion,small diced
  • 2 cloves garlic, microplaned
  • 4 cups chicken stock
  • ¼ cup tomato paste
  • ½ cup tomato puree
  • 1 cup heavy cream
  • 1 tsp black pepper 
  • 1 tsp salt 
  • 1 tbsp fresh parsley, chopped
  • ½ cup grated parmesan

DIRECTIONS

  • Brown that Calabrian sausage in a medium pot over medium heat.
  • Toss in the diced onion and microplaned garlic, and cook until they're nice and soft (about 5 minutes)
  • Stir in the tomato paste and puree, let it cook for a few minutes to build up flavor. Sprinkle with salt and pepper to taste.
  • Pour in the chicken stock, bring it to a boil, and then add the cannellini beans. Let it simmer for about 15 minutes.
  • Add the heavy cream, taste it, and adjust the salt if needed. If you want more kick, throw in some chile flakes!
  • Before you serve, stir in the fresh parsley and grated Parmesan.
