CALABRIAN | Puff Pastry & Sausage Pinwheels

Golden puff pastry filled with bold, spicy Calabrian sausage, melty cheese, and fresh herbs, perfect for parties or a savory snack!

INGREDIENTS

  • 2 teaspoons olive oil
  • 1 pack spicy Calabrian sausage
  • 2 large cloves garlic, minced
  • 1 14-ounce puff pastry sheet, thawed in the refrigerator if frozen
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated fontina cheese
  • 1 tablespoon coarsely chopped fresh parsley or basil
  • 1/2 teaspoon coarse kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • All-purpose flour, for dusting

DIRECTIONS

  • Heat olive oil in a large skillet over medium-high heat. Cook sausage, breaking into small crumbles, until browned but slightly pink, 5–8 min.
  • Add garlic and cook until fragrant, 2 min. Transfer sausage to a paper-towel-lined plate to cool.
  • Roll puff pastry into a 10×13-inch rectangle. Spread sausage over dough, leaving a ½-inch border. Sprinkle with cheeses, herbs, salt, and pepper.
  • Brush the far edge with water. Roll tightly from the near edge to form a log. Seal seam and chill 1–24 hrs.
  • Preheat the oven to 400°F. Slice log into 16 pieces and place on lined baking sheets, 1-inch apart.
  • Bake 20–25 min until golden brown. Cool 5 min on sheets, then transfer to racks. 
  • Serve warm or at room temperature.
