Lottie’s Spicy Calabrian Sausage, Beans & Leeks Skillet

Calabrian sausage, beans, and leeks simmered into a cozy, spicy one-pan dinner. Plus, there's bread!

INGREDIENTS

  • 1 lb Lottie’s Calabrian Sausage
  • 1 tablespoon butter
  • 1 leek, thinly sliced (white and light green parts only)
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • ½ cup grated Parmesan cheese
  • 2 cups bone broth
  • 2 cups baby spinach or chopped kale
  • Salt & pepper, to taste
  • Crusty bread, for serving

DIRECTIONS

  • Brown the Lottie's Calabrian Sausage: Heat a large skillet over medium heat. Add the ground sausage and cook until browned, breaking it into small pieces as it cooks. Transfer to a plate and set aside.
  • Prep the Leeks: Thinly slice the white and light green parts of the leeks. Place in a large bowl of water and swish to remove any dirt. Drain well.
  • Build the Base: In the same sausage skillet, add butter, leeks, and garlic. Cook over medium heat, stirring often, until the leeks are soft and fragrant.
  • Layer the Flavor: Stir in the cooked sausage and tomato paste until fully incorporated. Add the cannellini beans, bone broth, and Parmesan. Stir to combine.
  • Simmer: Bring to a gentle simmer and cook, stirring occasionally, until the broth slightly thickens and flavors meld together.
  • Finish with Greens: Remove from heat and stir in spinach or kale until just wilted.
  • Serve: Garnish with fresh herbs and an extra, extra sprinkle of Parmesan (measure with your heart). Serve warm with plenty of crusty bread for scooping-no spoons required!
