Bratwurst with Curry Sauce & An Apple Slaw

A family recipe favorite - Lottie's Bratwurst topped with our Aunt Marla's Creamy Curry Sauce and a crisp, tangy apple slaw = the ultimate balance of rich and fresh on a snappy Brat!

INGREDIENTS

Bratwurst + Curry Sauce

  • 1 Pack of Lottie’s Bratwurst
  • 2 cups mayo
  • 2 tsp curry powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tbsp white wine vinegar
  • 2 tbsp grated horseradish (fresh or prepared) 

Spiced Apple Slaw

  • 3 Green apples, julienned 
  • 2 tsp whole coriander seeds
  • 1 tsp whole black peppercorns
  • 1 tsp chile flake
  • 2 ea star anise 
  • 1 bay leaf
  • 1 cup rice wine vinegar
  • 1 cup water
  • 3/4 cup sugar
  • 1/2 head of green cabbage, julienned
  • 1 cup pickled apples 
  • 2 tbsp apple liquid
  • 2 tbsp EVOO 
  • Dash of white wine or rice vinegar

DIRECTIONS

Bratwurst + Curry Sauce:

  • Follow package instructions for cooking the Lottie’s Bratwurst
  • For the sauce, in a mixing bowl, add mayo, spices and horseradish. Once incorporated add vinegar and taste, adjust with salt. 

Spiced Apples

  • In a sauce pan, toast coriander, peppercorns and star anise on med heat until fragrant. Remove from heat and add vinegar, water, sugar, chile flake and bay leaf and a pinch of salt. 
  • Return to heat and bring to boil, once sugar is dissolved cool liquid.
  • Using a mandolin slice apples into thin slices, then cut into matchsticks. Place in container or bowl
  • Strain liquid over apples and place a piece of parchment over to keep submerged. 
  • Can use next day or keep up to 3-4 weeks. 

Spiced Apple Slaw:

  • In a bowl, mix cabbage and apples. Dress with liquid and oil, add a pinch of salt. 
  • Taste and adjust seasoning by adding a dash of vinegar. 
  • For crunchy slaw serve right away. Slaw will stay fresh up to 4-6 hours.
