  • 2 cups chopped cabbage
  • 2 cloves garlic, minced
  • 2 cups beef stock
  • 2 tbsp flour
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp chopped chives, for garnish

  1. Potato Time. Boil chopped potatoes in salted water until tender, about 10–12 minutes.Drain and mash with 2 tbsp butter, milk, and a pinch of salt until smooth. Keep warm.
  2. Cabbage it Up. In a skillet, melt 1 tbsp butter over medium heat. Add chopped cabbage and garlic. Season with salt and sauté for 5–7 minutes until tender and lightly golden.
  3. Cook the Bratwurst. Heat a pan over medium-high heat. Sear Lottie’s Bratwursts for 4–5 minutes per side, until browned and cooked through.
  4. Make the Simple Demi-Glaze. In a small saucepan, whisk 2 tbsp flour into the pan drippings or a bit of butter. Slowly add beef stock, stirring until smooth. Simmer for about 10 minutes until thickened. Stir in Worcestershire sauce and season with salt and pepper.

5. Serve & Garnish. Plate the mashed potatoes and cabbage, top with bratwurst, and drizzle with the demi-glaze. Sprinkle with fresh chives to finish.
