Augie's everyday breakfast bites
Easy breakfast sausage bites made with Lottie’s sweet-and-spicy Everyday Sausage, tater tots, eggs and cheese. Perfect for meal prep and freezer-friendly mornings! Manager Augie approved :)
INGREDIENTS
- ½ lb Lottie’s Everyday Sausage
- 4 large eggs
- ½ cup shredded cheese (cheddar or your favorite)
- Splash of milk or heavy cream
- 1 bag frozen tater tots (about 48 tots)
DIRECTIONS
- Preheat Oven: Preheat your oven to 425°F.
- Prep Tater Tots: Spread tater tots on a baking sheet and bake 5 minutes-just until thawed enough to press down.
- Cook Sausage: Crumble and brown Lottie’s Everyday Sausage in a skillet over medium heat until cooked through. Transfer to a bowl to cool slightly.
- Mix Filling: In a large bowl, whisk together eggs, shredded cheese, cooked sausage, and a splash of milk or cream until combined.
- Assemble the Bites! Spray a 24-cup mini muffin pan with cooking spray.Press one tater tot into the bottom of each cup to form a base. Divide the egg mixture evenly, spooning it over the tater tot bases.
- Bake: Bake at 425°F for 15-20 minutes, until the egg is set and lightly golden.
- Cool & Serve: Let cool slightly, then enjoy!
